Sébastien Delamer – A journey guided by the tides

Originally from Normandy, the land of oysters par excellence, Sébastien Delamer has dedicated over 25 years of his life to oysters. It’s there, close to the producers and the Norman coastline, that he developed his expertise and high standards.

His journey continued in Paris, where he refined his skills in renowned seafood establishments before settling in Nantes seven years ago. He started out as a mobile oyster vendor, traveling through local markets and events to share his exceptional oysters.

Three years ago, he decided to put down roots and opened Oyster Oyster—a place that reflects who he is: passionate, meticulous, and welcoming. A place where freshness, the quality of Norman products, and respect for the ingredient are at the heart of every plate.
